The Balmoral in Edinburgh was the first of 11 luxury destinations in the Rocco Forte Hotels collection. The family-run hotels place a strong focus on cuisine, with The Balmoral being home to the Michelin-starred Number One restaurant.
With Number One thriving, Rocco Forte collaborated with chefs Michel and Alain Roux to deliver Brasserie Prince, a new dining experience with a French twist.
Gratte Brothers was instructed to strip out the existing kitchen and design, supply and install a new split-level catering facility with a basement pastry prep area, ground floor main kitchen, and restaurant-facing show kitchen complete with fabricated meat hanging display.
