The Carnegie Club forms part of the Skibo Castle estate in Clashmore, Scotland. Once the retreat of industrialist Andrew Carnegie, the Edwardian-era castle and estate has now been transformed into a magnificent members’ club with international reach.
Gratte Brothers was commissioned to design, supply and install the commercial catering facility, which serves the entire complex. Working with Executive Chef Craig Rowlands, the design incorporated plinth mounting of all work surfaces and cooking equipment. The client required services to be fully concealed yet accessible for easy maintenance. This was achieved by studding out the existing walls to create service voids.
A Menu System central island cooking suite was specified, requiring a visit to the factory in Switzerland for test and inspection. The suite featured two multi-cookers, induction hobs, heated warming drawers, plancha, and a tasting utensil station. The kitchen is also equipped with a Marana Forni pizza oven, used for the World Pizza Championships in Italy. This 800kg oven runs on a duel fuel combination of gas and wood and required a specialist individual extraction system to be installed.
The design of the custom fabricated prep area, manufactured in stainless steel, required an uninterrupted 6m run. Specialist welding on site ensured that the finish was seamless and the specified smokey tint was unaffected.
