The Roux Family is perhaps the most influential, dynamic, and charismatic family in the catering industry. In 1972, with a number of successful London restaurants already under their vision, Michel and Albert Roux looked further afield for their next venture, stumbling across an old pub on the banks of the Thames in Bray. 12 months later, The Waterside Inn was born and in 2002, the helm was passed on to the now late Michel Roux's son, Alain, who continues to share his father's dedication to wonderful food and quality without compromise.

Scope of Works

Gratte Brothers was honoured to be selected to design develop and install the new foodservice facilities within this renowned, 3-star Michelin restaurant and we are delighted that this project marked the start of a decades-long relationship with the Roux family.

The kitchen was designed to Michel and Alain’s exacting specification and included an Athanor bespoke cooking suite, Hobart ware washing, Foster refrigeration and complete ventilation systems including extraction canopies and fresh air supply.

Award-Winning Features

A key feature of the kitchen is the customised stainless steel work stations which Alain had designed to his precise specification. Particularly important was the thickness of the tops which were twice the normal gauge.

Gratte Brothers Limited was also involved in the project and completed the associated mechanical and electrical services to allow the smooth running of the kitchen’s operations.

Gratte Brothers won both the Catering Equipment Distributors Association (CEDA) Hotel Sector and Grand Prix Award for this project.
